(A.K.A. The Tastiest Little Bundles Down Under)
Sweet, salty, crispy bacon bombs built for serious snacking! Think maple-kissed bacon wrapped around cheesy potato clouds… baked till golden and dangerously addictive. Perfect for parties, picnics or a cheeky solo feast. You’ve been warned.
Ingredients:
- 8 Rashers Economy Bacon
- 2 cups Mashed Potato (leftovers are perfect!)
- 1 cup Cheddar Cheese, grated
- 2 Spring Onions
- 1 tbsp Maple Syrup
- 1 tsp Smoked Paprika
- Salt & Pepper, to taste
Method:
- Preheat oven to 200°C and line a tray with baking paper.
- Mix mashed spuds, cheddar, spring onion, paprika, salt and pepper.
- Roll mixture into small balls (about a tablespoon each).
- Wrap each ball with half a rasher of bacon and place seam-side down on the tray.
- Brush lightly with maple syrup.
- Bake 20–25 minutes or until bacon is crisp and caramelised.
- Serve hot and watch them disappear!
They’re best served hot - and they’ll disappear fast!
