When you are craving takeout but want to stick to your high-protein, low-carb goals, this Asian Beef & Cabbage Stir-Fry is the perfect solution.

Often affectionately known in low-carb circles as an "Egg Roll in a Bowl," this recipe ditches the deep-fried pastry wrapper and focuses entirely on the star of the show: the hearty, flavourful filling.

By using lean beef mince, you're getting a fantastic protein hit, while the pre-shredded coleslaw mix provides bulk, essential dietary fibre, and a satisfying crunch without the heavy carb load of rice or noodles. The beauty of this recipe lies in its simplicity; it comes together in a single pan in under 20 minutes, making it an ideal choice for Sunday meal prep or a chaotic weeknight dinner.

Ingredients:
  • 500g Premium Beef Mince
  • 1 tbsp Toasted Sesame Oil
  • 4 Garlic Cloves, minced
  • 1 tbsp Fresh Ginger, grated
  • 1 large Dry Coleslaw Mix (shredded green cabbage, red cabbage, and carrots)
  • 60ml Soy Sauce (or Coconut Aminos for GF)
  • 1 tbsp Sriracha (or Chilli Garlic Sauce), adjust to taste
  • 4 Spring Onions (shallots), thinly sliced
  • 1 tbsp Sesame Seeds
Method:
  1. Brown the Beef:
    Heat a large wok or skillet over medium-high heat. Add the lean beef mince, breaking it apart with a wooden spoon. Cook for 5-7 minutes until completely browned and cooked through. Drain any excess liquid if necessary.

  2. Add the Aromatics:
    Reduce the heat slightly to medium. Push the beef to one side of the pan and add the minced garlic and grated ginger to the empty space. Sauté for about 60 seconds until highly fragrant, then mix it thoroughly into the beef.

  3. Toss in the Veggies:
    Dump the entire bag of coleslaw mix into the skillet. It will look like a lot, but it shrinks quickly. Toss everything together to combine.

  4. Sauce it Up:
    Pour the soy sauce, rice vinegar, toasted sesame oil, and sriracha (if using) over the beef and cabbage mixture. Stir continuously for 3-4 minutes, allowing the cabbage to wilt slightly but retain a good crunch.

  5. Garnish and Serve:
    Remove the skillet from the heat. Stir in half of the sliced green onions. Divide the stir-fry into four bowls, topping each with the remaining green onions and a sprinkle of sesame seeds. Serve hot!
