Serves: 4

Total Time: 35 minutes
For The Rissoles
- 750g Premium Beef Mince
- 1 medium Zucchini, coarsely grated
- 1 large Egg, lightly beaten
- 1/2 cup Rolled Oats
- 1 clove Garlic, finely minced
- 1 tsp Sea Salt
- 1/2 tsp Cracked Black Pepper
- 1 tbsp Olive Oil (for pan-frying)
For the Roast Sweet Potato & Salad
- 2 medium Sweet Potatoes, washed and cut into 2cm cubes or wedges
- 1 tbsp Olive Oil (for roasting)
- 120g Mixed Salad Leaves
- 1 fresh Lemon, cut into halves (one half for juice, one cut into wedges to serve)
- 1 tbsp Extra Virgin Olive Oil
- Pinch of Sea Salt and Cracked Black Pepper, to taste
Method:
-
Roast the Sweet Potato:
Preheat your oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper. Toss the cubed sweet potato in 1 tablespoon of olive oil with a pinch of salt and cracked pepper. Spread out in a single layer and roast for 25 minutes, turning halfway through, until edges are golden and caramelised. -
Prep the Zucchini:
Grate the zucchini onto a clean tea towel or heavy-duty paper towel. Gather the corners and squeeze firmly over the sink to remove excess moisture. Squeezing out the water keeps the rissoles firm and ensures a clean sear rather than steaming in the pan. -
Mix the Patties:
In a large mixing bowl, combine the Angliss Meats Premium Beef Mince, squeezed zucchini, rolled oats, beaten egg, minced garlic, 1 teaspoon of sea salt, and 1/2 teaspoon of black pepper. Mix with your hands until just combined. Avoid over-working the meat so the rissoles stay tender. -
Shape:
Divide the mixture into 8 evenly sized portions. Roll each into a ball and gently flatten into a thick rissole patty (about 2cm thick). -
Pan-fry to Perfection:
Heat 1 tablespoon of olive oil in a large skillet or heavy-based frying pan over medium heat. Place the rissoles into the pan, leaving enough room so they do not touch. Cook for 4 to 5 minutes on the first side until deeply browned and crusted. Flip gently and cook for another 4 to 5 minutes until cooked through to the centre. Transfer to a plate to rest for 3 to 4 minutes. -
Dress the Salad: Place the mixed salad leaves in a serving bowl. Drizzle with extra virgin olive oil, squeeze over fresh lemon juice, and toss lightly with a pinch of salt.
-
Plate and serve: Serve two rissoles per plate alongside a generous helping of sweet potato wedges, the dressed green salad, and an extra wedge of lemon on the side.
Handy tip
Never skip squeezing the zucchini. Zucchini is over 90 percent water. Squeezing out that extra liquid before mixing is the butcher's secret to getting a deep, golden crust in the pan while keeping the inside perfectly juicy instead of soggy.
Leftover Idea
Cooked rissoles keep brilliantly in an airtight container in the fridge for up to 3 days. Slice cold rissoles into halves and layer them into soft flatbread wraps with crisp lettuce, sliced tomato, and a dollop of tzatziki for a quick work lunchbox. You can also cube them cold over brown rice, roasted pumpkin, and baby spinach for an easy high-protein grain bowl.
