Bringing together a great balance of savoury, aromatic spices and refreshing mint, making a unique lamb dinner!
Ingredients:
- 4 lamb cutlets (or lamb loin chops!)
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt & pepper
- 1 cup fresh mint leaves
- 1/4 cup parsley
- 1/4 cup pine nuts (or almonds)
- 2 garlic cloves
- 1 tbsp lemon juice
- 1 cup couscous
- 1 1/4 cups broth (chicken or vegetable)
Method:
- Season the Lamb: Rub lamb cutlets/chops with olive oil, cumin, paprika, salt, pepper, and lemon juice. Let marinate for 20 minutes.
- Make the Mint Pesto: Blend mint, parsley, pine nuts, garlic, lemon juice, olive oil, salt, and pepper in a food processor until smooth.
- Cook the Lamb: IHeat a skillet over medium-high heat. Sear lamb cutlets/chops for 3-4 minutes per side. Let rest.
- Cook the Couscous: Boil broth, add couscous, cover, and let sit for 5 minutes. Fluff with a fork.
- Garnish & Serve: Plate couscous, top with lamb, and drizzle with mint pesto.
