Lamb Cutlets with Mint Pesto + Couscous

Bringing together a great balance of savoury, aromatic spices and refreshing mint, making a unique lamb dinner!

Ingredients:

  • 4 lamb cutlets (or lamb loin chops!)
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper
  • 1 cup fresh mint leaves
  • 1/4 cup parsley
  • 1/4 cup pine nuts (or almonds)
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • 1 cup couscous
  • 1 1/4 cups broth (chicken or vegetable)

Method:

  1. Season the Lamb: Rub lamb cutlets/chops with olive oil, cumin, paprika, salt, pepper, and lemon juice. Let marinate for 20 minutes.
  2. Make the Mint Pesto: Blend mint, parsley, pine nuts, garlic, lemon juice, olive oil, salt, and pepper in a food processor until smooth.
  3. Cook the Lamb: IHeat a skillet over medium-high heat. Sear lamb cutlets/chops for 3-4 minutes per side. Let rest.
  4. Cook the Couscous: Boil broth, add couscous, cover, and let sit for 5 minutes. Fluff with a fork.
  5. Garnish & Serve: Plate couscous, top with lamb, and drizzle with mint pesto.
