Rosemary & Garlic Lamb Loin Chops with Mash and Veggies

These Rosemary & Garlic Lamb Loin Chops with Mash and Veggies are the perfect weeknight meal — hearty, simple, and full of flavour. Because nothing beats a warm, home-cooked dinner!

The perfect weeknight meal.
Ingredients:
  • 4 lamb loin chops
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • Salt & pepper
  • 500 g potatoes, peeled & diced
  • 25 g butter
  • 1/4 cup milk
  • 200 g green beans or other veggies, trimmed

Method:
  1. Mash potatoes: Boil until tender, drain, mash with butter and milk, season with salt & pepper.

  2. Cook lamb: Rub chops with garlic, rosemary, olive oil, salt & pepper. Sear in a hot pan 3–4 min per side. Rest 2 min.

  3. Cook veggies: Sauté or steam green beans until tender.

  4. Pour in the pasta sauce and sprinkle in the oregano. Season with salt and pepper, then reduce heat to low and let the sauce gently simmer for 10–15 minutes, stirring occasionally.

  5. Serve: Plate mash, add veggies, top with lamb. Drizzle any pan juices over the meat.
