Slow-braised Hearty Kilcoy Rump Casserole

Melt-in-the-mouth Kilcoy Rump and rich gravy served over a comforting bed of smooth, buttery mash.

When the Darling Downs winter hits its stride, nothing beats a rich, slow-cooked meal that fills the whole house with incredible aromas. This recipe takes a whole premium Kilcoy Rump, renowned for its exceptional flavour and marbling - and transforms it into a deeply savoury, melt-in-your-mouth casserole. Pillowed on a bed of classic, velvety potato mash, it’s a high-protein, veggie-packed champion designed to warm you from the inside out.

For the Kilcoy Rump Casserole:

  • 1.2kg Kilcoy Rump
  • 2 tbsp Olive Oil
  • 3 tbsp Plain Flour, seasoned generously with sea salt and cracked black pepper
  • 1 large Brown Onion, diced
  • 3 Garlic Cloves, smashed and minced
  • 2 large Carrots, cut into thick rounds
  • 2 Parsnips, peeled and chopped into chunky pieces
  • 250g Button Mushrooms, halved
  • 2 Celery Stalks, sliced
  • 250ml Dry Australian Red Wine (Good quality, Shiraz if possible)
  • 500ml Rich Beef Bone Broth, or Rich Beef Stock
  • 2 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 3 springs Rosemary, fresh
  • 4 springs Thyme, fresh
  • 2 Bay Leaves, dried


The Creamy Potato Mash:

  • 1.2kg Sebago (or similar) Potatoes, peeled and chopped into event chunks
  • 50g Unsalted Butter, cubed
  • 125ml Warm Full-Cream Milk (or Cooking Cream for extra indulgence!)
  • Sea Salt, to taste
  • White Pepper, to taste

 

Method:

  1. Dust and Sear the Beef:
    Toss your cubed Kilcoy Rump in the seasoned flour until lightly coated. Heat half the olive oil in a large, heavy-based casserole dish or Dutch oven over medium-high heat. Sear the beef in batches until a rich, golden-brown crust forms on all sides (about 5–6 minutes per batch). Do not overcrowd the pan. Remove the beef and set it aside on a plate.

  2. Sauté the Veggies:
    Turn the heat down to medium and add the remaining olive oil to the same pot. Toss in the onion and celery, cooking for 3–4 minutes until softened. Add the garlic, carrots, parsnips, and mushrooms, sautéing for another 5 minutes until the veggies start to pick up some color from the pan.

  3. Deglaze the Pot:
    Stir in the tomato paste and cook for 1 minute. Pour in the red wine, using a wooden spoon to vigorously scrape up all those delicious, caramelised beef bits stuck to the bottom of the pot. Let the wine simmer and reduce by half (about 3–4 minutes).

  4. Bring It Together and Simmer:
    Return the beef and any resting juices back to the pot. Pour in the beef stock and Worcestershire sauce. Tuck in the rosemary, thyme, and bay leaves. Bring the liquid to a boil, then turn the heat down to a gentle simmer. Cover with a tight-fitting lid and let it braise on the stovetop for 2 to 2.5 hours, stirring occasionally, until the Kilcoy rump is incredibly tender and the gravy is thick and glossy. (Alternatively, pop the covered dish into a preheated 160°C oven for the same duration).

  5. Make the Potato Mash:
    Start this 30 minutes before the beef is done
    Place the potato chunks into a large pot of cold, salted water. Bring to the boil over high heat, then reduce slightly to a steady simmer. Cook for 15–20 minutes, or until the potatoes are completely tender when pierced with a fork. Drain well, then let them sit in the warm pot for 2 minutes to allow excess steam to evaporate. Mash thoroughly using a potato ricer or standard masher until no lumps remain. Stir through the butter and warm milk until silky, smooth, and creamy. Season generously with sea salt and white pepper.

  6. Serve:
    Remove the woody herb sprigs and bay leaves from the casserole. Spoon a generous mound of the creamy potato mash into deep bowls, create a small well in the center, and ladle the rich, bubbling Kilcoy beef casserole and savoury gravy right over the top.
