🔥 Big Protein, Low Carb: Your New Weeknight Stir-Fry Fix - It's fast, fiery and fuelled with protein!
Ingredients:
- 500g Premium Beef Mince
- 1 Broccoli, cut into small florets
- 1–2 Red Chillies, finely sliced (to taste)
- 200g Low Carb Noodles or Zoodles (Zucchini Noodles)
- 2 Garlic cloves, minced
- 2 tbsp Soy Sauce or Tamari
- 1 tbsp Sesame Oil
- 1 tbsp Olive Oil
- 1 Spring Onion
- Sesame Seeds
Method:
- Bring a pot of water to the boil and cook the low carb noodles according to packet instructions. Drain well and set aside.
- Heat the olive oil in a large frying pan or wok over medium–high heat. Add the beef mince and cook, breaking it up with a spoon, until well browned and any excess moisture has evaporated.
- Add the garlic and sliced red chillies to the pan. Stir-fry for 30–60 seconds until fragrant, taking care not to burn the garlic.
- Add the broccoli florets and cook for 4-5 minutes, stirring frequently, until bright green and just tender with a slight crunch.
- Reduce the heat to medium. Add the cooked noodles, soy sauce and sesame oil. Toss everything together until evenly coated and heated through.
- Remove from the heat and divide between bowls. Top with sliced spring onions to serve, and finish with a sprinkle of sesame seeds (optional).
