Spicy Lamb Ingredients:
- 4 Lamb Loin Chops
- 2 tbsp Olive Oil
- 1 tsp Chilli Flakes (adjust to taste)
- 1 Garlic Clove, crushed
- 1 tsp Smoked Paprika
- 1 tsp Ground Black Pepper
- 1 tsp Sea Salt
Crunch Salad Ingredients:
- ½ Cucumber, cut into long strips
- 1 cup Cherry Tomatoes, halved
- ½ Red Onion, thinly slices
- 1 cup Crispy Lettuce, turn
- Juice of ½ Lemon
- 1 tbsp Olive Oil
- Pinch of Sea Salt
Method:

Pat lamb dry and rub with olive oil, chilli flakes, paprika, garlic, salt and pepper.

Heat a pan or BBQ to medium-high and cook lamb for 3–4 minutes each side, until nicely charred and cooked to your liking.

Rest lamb for 5 minutes.

While resting, toss cucumber, tomatoes, onion and lettuce with lemon juice, olive oil and salt.

Serve lamb hot alongside the fresh crunch salad.
