Winter-Spiced Roast Lamb Loin Chops

When the chilly July frost rolls in, nothing brings the family together quite like a table groaning with a proper winter roast. This Christmas in July, give your celebrations a spectacular upgrade with our premium lamb loin chops, infused with festive rosemary, garlic, and a hint of warm allspice. Seared to perfection and smothered in a velvety red wine and cranberry reduction, this show stopping main sits beautifully alongside a classic spread of crispy roasted root veg, caramelised sprouts, decadent mash, and buttery green beans. It delivers all the magical, nostalgic comfort of a traditional holiday dinner in a fraction of the time, making it the ultimate hassle-free centrepiece for your cozy winter gathering.

Serves: 4 Adults

For the Lamb & Marinade:
  • 8 Lamb Loin Chops
  • 2 tbsp Olive Oil
  • 3 Garlic Cloves, minced
  • 1 tbsp Fresh Rosemary, finely chopped
  • 1 tsp Ground Allspice
  • Salt and Black Pepper, to taste
The Red Wine & Cranberry Glaze:
  • 1 cup Red Wine (bold variety, one you'd drink happily!)
  • 1/2 cup Cranberry Sauce
  • 1/2 cup Beef Stock
  • 2 tbsp Butter, cold, cut into cubes
Roast Veg & Festive Green Beans:
  • 2 large Carrots, peeled and cut into thick batons
  • 2 large Parsnips, peeled and cut into thick batons
  • 2 medium Roasting Potatoes (Sebago), peeled and cut into chunks
  • 200g Brussels Sprouts, trimmed and halved
  • 250g Green Beans, trimmed
  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • 1 Garlic Clove, thinly slices (optional)
The Ultimate Creamy Mash:
  • 4 large Mashing Potatoes (Desiree), peeled and quartered
  • 50g Butter
  • 1/4 cup Milk or Cream
  • Salt
  • White Pepper, to taste

 

Method:

1. Roast the Root Veg & Sprouts
  1. Preheat your oven to 200°C (180°C fan-forced).

  2. Toss the chopped carrots, parsnips, roasting potato chunks, and halved Brussels sprouts in a large bowl with 2 tbsp olive oil, salt, pepper, and a few fresh rosemary sprigs.

  3. Spread them out in a single layer on a large baking tray. Roast for 35–40 minutes, turning halfway through, until the edges are beautifully caramelised and crispy.

2. Get the Mash On
  1. While the veg is roasting, place your quartered mashing potatoes into a large pot of cold, salted water.

  2. Bring to a boil and cook for 15–20 minutes until completely fork-tender.

  3. Drain well, return to the hot pot for 1 minute to steam off excess moisture, then mash enthusiastically with 50g butter and the milk or cream. Season generously with salt and white pepper. Cover to keep warm.

3. Marinate & Sear the Lamb
  1. In a small bowl, combine the 2 tbsp olive oil, minced garlic, chopped rosemary, ground allspice, salt, and black pepper. Rub this mixture evenly over both sides of the lamb loin chops and let them rest at room temperature for 15 minutes.

  2. Heat a large skillet or frying pan over medium-high heat. Add the lamb chops and sear for 3–4 minutes per side for medium-rare.

  3. Remove the chops from the pan, place them on a warm platter, and tent loosely with foil to rest.

4. Build the Glaze & Flash the Beans
  1. Turn the skillet heat down to medium. Pour in the red wine, using a wooden spoon to scrape up all those delicious, caramelised lamb bits from the bottom of the pan. Let it simmer and reduce by half (about 2 minutes).

  2. Stir in the cranberry sauce and beef stock. Whisk gently until smooth and let it bubble away for 3–4 minutes until it thickens into a rich, glossy glaze.

  3. Remove from the heat and whisk in the 2 tbsp of cold butter for a silky finish.

  4. Quick Side Note: While the glaze reduces, quickly steam or boil your green beans for 3 minutes until tender-crisp. Drain and toss with 1 tbsp butter and sliced garlic if desired.

5. Feast Time!
  • Spoon a generous cloud of creamy mash onto each plate, stack up the crispy roasted root veg, sprouts, and bright green beans. Nestled beside them, place your succulent lamb chops and pour that velvety red wine and cranberry glaze generously over the top. Garnish with fresh rosemary.
