Zesty Lemon Garlic Chicken

This Lemon Garlic Chicken is a weeknight hero: tender, juicy chicken breasts or tenderloins with a zesty, garlicky kick. Quick to prep, easy to cook, and a family favourite — perfect for sharing or meal-prepping for the week!

Ingredients:

  • 4 Skinless Chicken Breasts
  • 3 Garlic Cloves, minced
  • 1-2 Lemons, zest and juice
  • 2 tbsp Olive Oil
  • 1 tsp Oregano, dried
  • Salt and Pepper, to taste
  • Optional: Fresh Parsley, for garnish

Method:

  1. Preheat & Prep
    Preheat your oven to 200°C (180°C fan). Line a baking dish with baking paper or lightly grease it to prevent sticking.

  2. Make the Marinade
    In a small bowl, combine the minced garlic, lemon zest and juice, olive oil, herbs, salt and pepper. Mix well so all the flavours come together.

  3. Coat the Chicken
    Place the chicken in a separate bowl and pour over the lemon-garlic mixture. Toss the chicken well so each piece is fully coated — this is where the flavour magic happens!

  4. Roast to Perfection
    Arrange the chicken in the prepared baking dish in a single layer. Roast in the oven for 20–25 minutes, or until cooked through and juices run clear. Slice the thickest part to check it’s no longer pink.

  5. Garnish & Serve
    Once cooked, remove from the oven and sprinkle with freshly chopped parsley. Serve with your favourite sides — roasted veggies, rice, or a crisp salad.
