This Lemon Garlic Chicken is a weeknight hero: tender, juicy chicken breasts or tenderloins with a zesty, garlicky kick. Quick to prep, easy to cook, and a family favourite — perfect for sharing or meal-prepping for the week!
Ingredients:
- 4 Skinless Chicken Breasts
- 3 Garlic Cloves, minced
- 1-2 Lemons, zest and juice
- 2 tbsp Olive Oil
- 1 tsp Oregano, dried
- Salt and Pepper, to taste
- Optional: Fresh Parsley, for garnish

Preheat & Prep
Preheat your oven to 200°C (180°C fan). Line a baking dish with baking paper or lightly grease it to prevent sticking. -
Make the Marinade
In a small bowl, combine the minced garlic, lemon zest and juice, olive oil, herbs, salt and pepper. Mix well so all the flavours come together. -
Coat the Chicken
Place the chicken in a separate bowl and pour over the lemon-garlic mixture. Toss the chicken well so each piece is fully coated — this is where the flavour magic happens! -
Roast to Perfection
Arrange the chicken in the prepared baking dish in a single layer. Roast in the oven for 20–25 minutes, or until cooked through and juices run clear. Slice the thickest part to check it’s no longer pink. -
Garnish & Serve
Once cooked, remove from the oven and sprinkle with freshly chopped parsley. Serve with your favourite sides — roasted veggies, rice, or a crisp salad.
