Beef Mince + Sweet Potato Cottage Pie

A Hearty Aussie Classic with a Sweet Potato Twist!

Ingredients:

  • 500g Premium Beef Mince
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, diced
  •  1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  •  ½ cup frozen peas
  • 1 tbsp plain flour
  • ¾ cup water or beef stock
  • 2 large sweet potatoes, peeled & chopped
  • 1 tbsp butter
  • 2 tbsp milk
  •  Salt & pepper

Method:

  1. Cook Filling:
    Sauté onion, garlic, and carrot in a pan. Add mince and brown. Stir in tomato paste, Worcestershire, thyme, peas, flour, and water. Simmer for 10–15 mins until thick.
  2. Make Mash:
    Boil sweet potatoes until soft. Drain & mash with butter, milk, salt & pepper.
  3. Assemble & Bake:
    Spread mince in a baking dish, top with mash. Bake at 200°C for 20–25 mins until golden.
  4. Serve hot and enjoy!
