A quick Aussie pub-style parmi using ready-made schnitzels — crispy chicken topped with ham, melty tasty cheese and juicy cherry tomatoes.
Parmi Ingredients:
- 4 Crumbed Chicken Schnitzel (Fresh)
- 1 1/2 cups Shredded Tasty Cheese
- 4 Leg Ham Slices
- 2 tsp Olive Oil
- 1 cup Tomato Pasta Sauce
- 1 cup Cherry Tomatoes
Homemade Chips Ingredients:
- 4 large Potatoes, cup into thick chips
- 2 tbsp Olive Oil
- 1 tsp Sea Salt
- ½ tsp Paprika (optional)
Method:

Cook the Chips
Preheat oven to 220°C (200°C fan). Toss the cut potatoes with olive oil, salt and paprika. Spread onto a lined baking tray in a single layer. Bake for 30–35 minutes, turning halfway, until golden and crispy.

Cook the Schnittys
Heat a large frying pan over medium heat with a small drizzle of oil. Cook the crumbed chicken schnitzels for 3–4 minutes per side, until the crumb is golden and crisp. Transfer the schnitzels to a lined baking tray.

Add the Parmi Toppings
Spread a spoonful of tomato pasta sauce over each schnitzel.
Top with: a slice of ham, a generous handful of shredded tasty cheese, a scatter of cherry tomatoes

Bake
Place the tray in the oven and bake for 10–12 minutes, until the cheese is melted, bubbly and lightly golden.

Serve
Serve the chicken parmigiana hot with a generous pile of homemade chips and your favourite fresh side salad.
Optional Aussie touch: add a lemon wedge and a squeeze of tomato sauce on the side.
