The combination of bright citrus flavours, aromatic ginger, and tender beef makes for a refreshing, vibrant dish perfect for warm weather.

Ingredients:
- 500g thinly sliced Beef Fillet
- 1 tbsp fresh grated ginger
- 2 garlic cloves, minced
- 2 capsicum, thinly sliced
- 1 small cucumber, julienned
- 1 carrot, thinly sliced
- 1 red onion, thinly sliced
- 1/2 cup snow peas
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp honey or maple syrup
- 1 Orange - for Zest and Juice
- 1 Lime - for Zest and Juice
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp vegetable oil (for stir-frying)
- Fresh coriander and sesame seeds (for garnish)

Instructions:
- Prep the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, honey, orange juice, lime juice, rice vinegar, sesame oil, grated ginger, and orange and lime zest. Set aside.
- Stir-fry the beef: cooking for about 2-3 mins until browned and just cooked through. Remove and set aside.
- Vegetables: In the same skillet, add the capsicum, red onion, and carrot, stir-frying for about 2-3 minutes until slightly tender but still crisp. Add the snow peas and cucumber, for 1-2 mins.
- Combine: Return the beef to the pan, pour over the citrus-ginger sauce, and toss everything together to coat well. Cook for another 2 mins until the sauce slightly thickens.
- Garnish & Serve: Remove from heat and garnish with fresh coriander and sesame seeds.
- Serve over a bed of jasmine rice or noodles, and enjoy the fresh, zesty flavours!
