From freezer to fiesta in minutes! These fish tacos are a winner for busy weeknights!
Ingredients:

4–6 soft tortillas

1 cup shredded lettuce

1 ripe avocado, sliced

Your favourite sauce (mayo, tartare, chipotle or sriracha-mayo)

Optional: fresh lime wedges, chopped coriander
Method:
- Preheat the oven to 180°C (fan forced) or heat a pan with a splash of oil over medium heat.
- Cook the fish fillets for 8–10 minutes, flipping halfway, until golden brown and cooked through.
- While the fish is cooking, warm your tortillas in a dry pan or microwave for 20–30 seconds.
- Slice the cooked fish into chunky strips.
- Assemble your tacos: layer lettuce, fish, avocado and your sauce of choice in each tortilla.
- Finish with a squeeze of lime and a sprinkle of fresh herbs if you like.
