Ingredients:

Method:

1.  Preparation: Remove from the fridge an hour before cooking and preheat your oven to 170°c.
2.  Seasoning: Rub the lamb with olive oil, then season generously with salt and pepper. Optionally, insert slivers of garlic and rosemary into small incisions.
3.  Roasting: Place the lamb in a roasting tray on a bed of chopped onions and garlic. Add 500ml of stock around the lamb.  Cover tightly with foil and roast for about 4 hours. During this time, par boil your potatoes and let them cool, cover in olive oil and salt and add them to the roast dish with whole or half chopped tomatoes for the last 45 minutes.
4.  Browning: Remove the foil for the last 30 minutes to allow the top to brown.
5.  Resting: Let the lamb rest covered loosely with foil for 20 minutes before carving.
6.  Serving: Slice and serve with your favourite sides and pan juices.
