Ingredients:

  • 1lb Restaurant Quality Sirloin Beef, thinly sliced
  • 2 tbsp Massaman curry paste
  • 1 can (14 oz) coconut milk
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 potatoes, peeled and diced
  • 1/2 cup roasted peanuts
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp tamarind paste (optional)
  • 1 cup beef broth or water
  • Fresh cilantro for garnish

Method:

  1. Cook the beef: Heat oil in a large pot over medium-high heat. Add the sliced sirloin and cook until browned, then remove and set aside.

  2. Sauté the onion: In the same pot, add the sliced onion and cook until softened, about 3 minutes.

  3. Add curry paste: Stir in the Massaman curry paste and cook for 1-2 minutes to release the flavours.

  4. Combine ingredients: Add the coconut milk, beef broth, potatoes, fish sauce, brown sugar, and tamarind paste (if using). Stir well and bring to a simmer.

  5. Simmer: Let it cook for 15-20 minutes, until the potatoes are tender.

  6. Finish the dish: Add the cooked beef back to the pot along with roasted peanuts. Stir to combine and cook for an additional 5 minutes.
