Looking for a dinner that will get the whole family sprinting to the table? These Middle Eastern Spiced Chicken Flatbreads are an absolute winner. We’re taking lean, mean, high-protein skinless chicken breasts and transforming them with a quick, earthy spice rub that packs a serious flavour punch without blowing anyone’s socks off with heat. It’s a fun, hands-on meal where everyone can load up their own flatbread exactly how they like it. Perfect for a busy weeknight when you want a top-notch feed without spending hours in the kitchen!

Serves 4

Cook time: 12 minutes

For the Chicken:
  • 600g Skinless Chicken Breasts, sliced into strips
  • 1 tbsp Olive Oil
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • Pinch of Salt & Black Pepper
  • Squeeze of Fresh Lemon Juice
For the Load-Up (The Whole Meal!):
  • 4 large Lebanese-style Flatbreads
  • 1 large Cucumber, diced
  • 250g Cherry Tomatoes, quartered
  • 1/2 small Red Onion, very finely sliced
  • 1 large handful of Fresh Parsley, roughly chopped
  • 4 generous dollops of Plain Hummus
  • Extra Lemon Wedges, to serve
Method:
  1. Spice it Up:
    Chuck your chicken breast strips into a large bowl. Add the olive oil, cumin, coriander, smoked paprika, garlic powder, salt, and pepper. Give it all a really good toss with your hands until every bit of chicken is beautifully coated in that gorgeous spice mix.

  2. Sizzle Time:
    Heat a large frypan (or fire up the barbie!) over medium-high heat. Once it's nice and hot, add the chicken strips. Cook them for about 5 to 6 minutes, turning occasionally, until they are golden, slightly charred on the edges, and cooked all the way through. Give them a quick squeeze of fresh lemon juice right at the end.

  3. Prep the Fresh Stuff:
    While the chicken is sizzling away, mix your diced cucumber, cherry tomatoes, red onion, and parsley in a small bowl to make a quick, crunchy salsa.

  4. Warm the Breads:
    Warm your flatbreads up for a few seconds in the microwave or toss them briefly on the hot pan so they are soft and pliable.

  5. Build your Masterpiece: 
    Smear a good spoonful of hummus down the middle of each warm flatbread. Load up with the hot spiced chicken, pile on a mountain of the fresh tomato and cucumber salsa, and fold it on up. Get stuck in!
