Ingredients:
- 500g Mooloolaba King Prawns, thawed, peeled, tails on
- 1 tbsp Coconut Oil (or olive oil)
- 1 Brown Onion, finely diced
- 1 Red Capsicum, thinly sliced
- 150g Snow Peas, trimmed
- 2 tbsp Mild Yellow Curry Paste (or a mild korma paste for sensitive palates)
- 400ml Coconut Milk, tin full-fat
- 1 tbsp Fish Sauce
- 1 tsp Brown Sugar
- 1 fresh Lime, juiced
- Fresh Coriander, leaves, to serve
- Jasmine Rice, steamed, to serve

Thaw the Prawns:
Place the frozen Mooloolaba prawns in a colander and run them under cold tap water for 5 to 10 minutes until fully thawed. Pat them completely dry with a paper towel.

Sauté the Base:
Heat the oil in a large frying pan or wok over medium heat. Add the diced onion and cook for 3 minutes, or until soft and translucent.

Fry the Paste:
Stir in the mild curry paste and cook for 1 minute until fragrant.

Create the Sauce:
Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine, bring to a gentle simmer, and let it bubble away for 3 minutes so the flavors can develop.

Add Veggies and Prawns:
Drop in the sliced capsicum, snow peas, and your thawed prawns. Simmer gently for 3 to 4 minutes. The prawns are ready the moment they turn a beautiful opaque pink—be careful not to overcook them so they stay sweet and tender!

Remove the pan from the heat and stir through the fresh lime juice. Serve immediately in bowls over steamed jasmine rice, topped with fresh coriander.
