Souvlaki Chicken Pitas

Juicy marinated chicken skewers wrapped in warm pita, fresh sides and crisp chips – a Greek street-food classic made easy.

 

Ingredients:
  • 4 Chicken Kebabs
  • 4 Pita Breads, warmed
  • 1 cup Lettuce, shredded
  • 2 ripe Tomatoes, sliced
  • 1 cup Pickled Red Onion
  • Hot Chips, to serve
Souvlaki Marinade/Seasoning:
  • 2 tbsp Olive Oil
  • Juice of 1 Lemon
  • 3 cloves Garlic, minced
  • 1 tsp Oregano, dried
  • 1 tsp Thyme, dried
  • ½ tsp Ground Cumin
  • Salt & black Pepper, pinch
Tzatziki (homemade):
  • 1 cup Greek Yoghurt
  • ½ Cucumber, grated and squeezed dry
  • 2 cloves Garlic, minced
  • Juice of ½ Lemon
  • 1 tbsp Olive Oil
  • Pinch of Salt
Method:
  1. In a small bowl, mix olive oil, lemon juice, garlic, oregano, thyme, cumin, salt and pepper. Brush or spoon over the Angliss Meats Chicken Kebabs and let them sit for at least 20 minutes (or overnight in the fridge for extra flavour).

  2. Preheat BBQ or grill plate to medium-high. Cook marinated kebabs for 10–12 minutes, turning until golden and cooked through.

  3. While cooking, mix all tzatziki ingredients in a bowl. Chill until ready to serve.

  4. Warm pita breads on the grill for 1–2 minutes.

  5. To assemble: remove chicken from skewers, place onto pita with lettuce, tomato, pickled onion and a dollop of tzatziki.

  6. Wrap, serve with hot chips on the side, and enjoy straight away.
