Total Time: 1 hour 5 minutes
For the Beef & Tomato Sauce
- 500g Premium Beef Mince
- 500g Lean Beef Mince
- 1 tbsp Olive Oil
- 1 Brown Onion, finely diced
- 2 Garlic Cloves, crushed
- 1 Carrot, finely grated
- 1 tbsp Tomato Paste
- 400g Tin Crushed Tomatoes
- 400g Tin Diced Tomatoes
- 1 tsp Dried Italian Herbs
- 1 tsp Dried Oregano
- 1 tsp Paprika
- 1 Beef Stock Cube, crumbled
- 1 tsp Worcestershire Sauce
- Salt and Black Pepper, to taste
For the Creamy Layer
- 400g Cottage Cheese
- 1 Egg
- 40g Parmesan Cheese, finely grated
- 1 tsp Italian Herbs
- Salt and Black Pepper, to taste
To Assemble
- 8 Lasagne Sheets, preferably fresh, approximately 150g
- 150g Mozzarella Cheese, grated
- 20g Parmesan Cheese, finely grated
Method:
Make the Beef Sauce:
- Heat the olive oil in a large frying pan over medium-high heat. Add the onion and carrot and cook for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
- Add the beef mince and cook for 5–7 minutes, breaking it up with a wooden spoon, until browned.
- Stir through the tomato paste, Italian herbs, oregano and paprika. Cook for 1 minute, then add the crushed tomatoes, diced tomatoes, beef stock cube and Worcestershire sauce.
-
Season with salt and pepper, then reduce the heat and simmer for 15–20 minutes, stirring occasionally, until the sauce has thickened.
Make the Creamy Layer:
-
While the beef sauce is simmering, combine the cottage cheese, egg, Parmesan and Italian herbs in a bowl. Season with a little salt and pepper and mix well.
Assemble:
-
Preheat the oven to 190°C fan-forced. Spread a thin layer of beef sauce over the base of a medium baking dish. Add a layer of lasagne sheets, followed by more beef sauce and a layer of the cottage cheese mixture.
- Repeat the layers, finishing with the remaining beef sauce. Sprinkle the mozzarella and Parmesan evenly over the top.
-
Cover loosely with foil and bake for 25 minutes. Remove the foil and bake for a further 15–20 minutes, or until bubbling and golden.
- Remove from the oven and rest for 10 minutes before slicing. This helps the layers hold together when served.
Handy Tip
For an even richer beef sauce, let it simmer for an extra 10–15 minutes if you have the time. You can also prepare the lasagne ahead of time and keep it covered in the fridge until you're ready to bake.
Serving Suggestion
Serve generous slices with a crisp green salad and some warm garlic bread. For extra veggies, add steamed broccoli, green beans or roasted zucchini on the side.Approx. Macros Per Serve (4 Serves):
