Fresh Mooloolaba King Prawns, a hint of chilli and vibrant tomatoes - ready in 20 minutes!

Ingredients:
- 500g Mooloolaba King Prawns, peeled & deveined
- 350g Linguine
- 2 tbsp Olive Oil
- 3 cloves Garlic, sliced
- 1 sml Red Chilli, finely chopped (adjust to taste)
- 400g Cherry Tomatoes, halved
- 1/2 cup Snow Peas
- 1/2 cup Fresh Parsley, chopped
- Salt and Cracked Black Pepper, to taste
- Zest and Juice of 1 Lemon
- 400g Cherry Tomatoes, halved
Optional Toppings:
- Grated Parmesan, to serve

Cook pasta:
Bring a large pot of salted water to boil. Cook pasta according to packet instructions. Drain, reserving 1/2 cup pasta water.

Cook prawns & tomatoes:
Heat olive oil in a large pan over medium-high heat. Add garlic and chilli, cook 1 min until fragrant. Add prawns and season with salt and pepper. Cook 2–3 mins per side until pink. Add cherry tomatoes and cook 2–3 mins until just softened.

Combine:
Toss cooked pasta into the pan with prawns and tomatoes. Add lemon juice, zest, parsley, and a splash of reserved pasta water to bring it together.

Serve:
Divide among plates, sprinkle with extra parsley and optional Parmesan, and serve immediately.
